COZZE ALLA TARANTINA


Inspired by the city of Taranto in the region of Puglia, this quick and easy recipe uses only a few simple ingredients that are guaranteed to impress your guests. To create an all-round taste experience, Cozze alla Tarantina is best enjoyed in great company with BIRRA MORETTI Sale di Mare.


Serves 4-6

Mussels in tomato sauce served on a plate

INGREDIENTS

  • 1kg Mussels
  • 2 Cloves Garlic
  • Parsley Bunch
  • Olive Oil
  • White Wine
  • 300-500g Fresh Tomatoes
  • Dried Chili Flakes
  • Salt & pepper

METHOD

  1. Sauté 1 clove of garlic & parsley in olive oil for 2-3 mins, once fragrant add the mussels and pour a good glug of white wine.
  2. Cover and let the mussels steam until they open from their shells.
  3. Remove the mussels once cooked.
  4. In a separate pan sauté the remaining garlic clove with the chili flakes, add the tomatoes and reduce until a thick saucy texture is achieved.
  5. Add the mussels back into the pan alongside their cooking juices, serve in a dish garnished with fresh parsley
  6. Toasted focaccia is the authentic recommended accompaniment for this dish.
